MAKE: Easy Drop Biscuits

Sometimes toast just doesn't do it for me. I want something flaky and buttery with my eggs! I love these biscuits because they are made from ingredients you most likely already have in your kitchen. A few weeks ago I combined them with gravy for a quick and easy biscuits and gravy. And they aren't just good for breakfast-- they are a fantastic substitute for rolls at dinner too.

Ingredients:

3 cups of all-purpose flour
2 tbsp. baking powder
1 1/2 sticks of butter (cold and cut into small pieces)
1 3/4 cups of milk
pinch of salt
fresh herbs, like rosemary or sage (optional)
melted butter, to brush on top (optional)

MAKE:
Preheat oven to 400 degrees F.  
Place the flour, baking powder and salt in a food processor and pulse a few times to combine.
Add the butter (and fresh herbs if you have them on hand) and pulse until ingredients are combined.
Slowly add the milk through the top opening and pulse simultaneously. 
 Once the dough starts to come together it is ready, do not over mix.  
Drop hefty spoonfuls of the mixture onto a greased baking tray. 
Bake for 20-25 min.
Once they are golden brown, remove from oven.
Brush with melted butter after you they are done if desired!
Makes 12-15 biscuits.

Have a fun weekend!

My mind is in full fledge spring mode lately. Even though the weather this week has told me otherwise, I am determined to be done with winter. I want to be outside, and feel light, and airy, and enjoy it all. So there. What are you up to this weekend? Tonight is date night so I am putting on a cute dress and some lipstick and going out to dinner with my man. I love spending an evening eating great food. The rest of the weekend is pretty undecided at this point...but this made me laugh.

Wandering Wednesday: Jackson, TN + A Baby Shower

^^ all my girls! Such pretty mamas :) 

 When I was planning this baby shower from so many miles away, I had pictures in my head of how I wanted it to look, but had no idea how any of it would turn out. I was so anxious to get to TN and put everything in its place! Luckily the decorations we ordered arrived on time, and we had plenty of helping hands. Honestly, the day was so gorgeous, and the setting was so perfect, that all the little details were just the icing on the cake! With spring in full bloom right now, My dad's backyard is the dream setting for a baby shower and the seventy degree weather wasn't too shabby either. We invited mainly family and close friends and decided that, although a lot of baby showers are gender exclusive, we wanted the men there too ;) With that in mind, I created a game that revolved around the new dads, and called it 'The Newly Dad' game. (the basic gist of the game is explained here, but I tweaked it a little) The best part of the whole party was that all of my families were all in one place at one time...step, ex, in-law, you name it, everyone showed up! One big,happy,dysfunctional family! To some that might sound like a total nightmare, but to me it was pretty amazing to see everyone together, sharing this beautiful day. I can't wait for these baby girls to join in on all the fun! It's funny how these sorts of things can bring the most unlikely crew together. And this crew, my family, is the best crew around in my book!

Some news....


I am not sure how I've managed to wait this long before writing this post, but I AM GOING TO BE AN AUNTIE! X2! My sister-n-law Kali (left) and my sister Kate (right) are both expecting babies this Spring/Summer! It's been really hard to see all the Instagrams, milestones and celebrations in Tennessee, while I just sit here idly watching from the internet. Finally, this weekend, I am flying down to see them! I can't wait! My Dad, step-mom and I are throwing a baby shower for them on Saturday, and I am taking a long weekend off work to spend some much needed catch up time with my family. Sometimes living far away is tough! I am sure to return with a million pictures and videos to share :) Oh, and if you are curious--- they are both expecting GIRLS. Kali is due early May and Kate is due early August. Woot, woot! This year is going to be quite a ride!

Wandering Wednesday: Jo's birthday.



Joanna celebrated her birthday a couple weekends ago, and in good ol' Colorado style, our plans to play in the park all day were ruined by the persistant wind. Determined, we rerouted to Joanna's house and continued the festivities. I left my digital camera at home, and decided that this was a good day for film. I feel like there is a little bit of a 70's vibe to these photos, no? The day was spent eating pie, soaking up the sun and listening to records. The girls were even rushed off to Moondance mid-day for a spa foot treatment (what!), a surprise from Joanna's bf James. We returned pampered, and the celebration persevered into the late evening. It's days like this that put it all into perspective-- these are my people and I feel so fortunate to be surrounded by them.

Happy Monday!


Last week kind of got away from me and all of the sudden it was Easter. I had plans for some more postings, but never managed to get to them. How was your Easter weekend? It was beautiful here and I was glad to spend some much needed time outdoors playing bocce ball with Rob's family and watching the boys throw the frisbee around. I even got a touch of sun! Saturday we went to a hockey game, which was pretty out of the blue, but really great. Rob's dad got tickets from work and handed them off to us and we couldn't have asked for better seats. Coincidentally, Colorado was playing Nashville so I was rooting for both teams....but pretty psyched to cheer along when Colorado won! And now it's Monday. Sheesh, it all just goes by too fast.
