Two Sandwiches.


I am much more a sandwich kinda girl than a salad girl. Ever since going to Spinelli's Market (my new favorite spot) and experiencing their wonderful deli sandwiches, I've been having the urge to try my own creations. Over the past couple weeks I've made these two sandwiches. They do not disappoint...and are so much more fun to look forward to in my lunch bag (yes, I bring my own lunch to work) than the average meat and cheese on wheat bread I normally throw together. So here's to a better lunch, cause lunch is far too under-rated...

Tuscan Sandwich (adapted straight from Spinelli's menu)

+ turkey
+ goat cheese
+ pesto (homemade or store bought)
+ arugula
+ pear slices
+ good crusty bread

Slice the bread in half. Smear the pesto on one side and the goat cheese on the other. Assemble the rest of ingredients and Enjoy!

Avocado Egg Salad (adapted from Martha Stewart)

+ 5 hard boiled eggs
+ 1 avocado
+ 2 tbsp. mayo
+ 1 tsp. red wine vinegar
+ squirt of Dijon mustard
+ salt and pepper to taste
+ toasted white bread
+ lettuce and a couple tomato slices (optional)

Mash the 1st 6 ingredients together with the end of a fork. Toast bread and spread on the egg salad. Top with any veggies desired, tomato and lettuce are good options. Yummy!
